What You’ll Need

  • 1.5 cups of Arborio rice
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup of dry white wine
  • 5 cups of chicken broth
  • 2 cups of pumpkin puree
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of unsalted butter
  • Salt and pepper to taste
  • 1/2 teaspoon of nutmeg
  • 1/4 cup of chopped fresh sage
ALLERGENS: Arborio rice, olive oil, onion, garlic, dry white wine, chicken broth, pumpkin puree, Parmesan cheese, unsalted butter

Method

Step One

Start by heating the olive oil in a large pot over medium-high heat. Once the oil is hot, add the finely chopped onion and minced garlic. Cook these until the onion turns transparent and the garlic releases its fragrance.

Step Two

Once the onions and garlic are cooked, add the Arborio rice to the pot. Stir the rice until it is fully coated in the garlic, onion, and olive oil mixture. Cook the rice until it starts to toast slightly, this will take about 4-5 minutes.

When the rice is toasted, add the dry white wine to the pot. Stir the rice in the wine until the liquid is fully absorbed.

Step Four

After all the chicken broth has been added and absorbed, stir in the pumpkin puree. Continue cooking and stirring the risotto until the pumpkin is fully incorporated.

Step Six

Add the grated Parmesan cheese, unsalted butter, salt, pepper, and nutmeg to the pot. Stir these in until the cheese and butter melt and fully coat the risotto.

Step Seven

Remove the pot from the heat and stir in the chopped fresh sage. Once the sage is fully incorporated, serve the pumpkin risotto warm.
