What You’ll Need

  • 2 cups water
  • 1.5 cups white vinegar
  • 1 tablespoon sugar
  • 1 tablespoon coarse salt
  • 1 cucumber, thinly sliced
  • 1 spicy pepper, thinly sliced (jalapeno, serrano or your choice)
  • 1 cup fresh dill, roughly chopped
  • 2 cloves of garlic, minced

Method

Step One

Prepare your ingredients. Thinly slice the cucumber and the spicy pepper of your choice. Roughly chop the fresh dill and mince the garlic.

Step Two

Combine the water, white vinegar, sugar, and coarse salt in a saucepan. Bring to a simmer over medium heat, stirring occasionally to ensure the sugar and salt are fully dissolved.

Step Three

Once your brine is ready, add the thinly sliced cucumber, spicy pepper, and minced garlic to it. Make sure everything is submerged in the liquid.

Step Four

Add the chopped dill to the mixture, stir well, and then remove the saucepan from the heat.

Step Five

Char the brine for around 15 minutes to let the flavors infuse and the cucumbers to soften slightly.

Step Six

Allow the pickles to cool, then transfer everything to a jar. Make sure the cucumbers and peppers are fully submerged in the brine when stored.

Step Seven
