What You’ll Need

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups packed fresh spinach, chopped
  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 2 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon flaxseed meal
  • 2.5 tablespoons water
  • 4 tablespoons vegetable oil for frying

Method

Step One

Begin by rinsing 1 cup of uncooked quinoa under cold water until the water runs clear. Now, in a saucepan, combine the quinoa with 2 cups of vegetable broth. Cook according to the package instructions, then fluff with a fork and set aside.

Step Two

In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add 1 small finely chopped onion and 2 cloves of minced garlic, sautéing until the onion becomes translucent. Now add the 2 cups of packed chopped spinach and cook until wilted. Transfer the mixture to a large bowl.

Step Three

To the onion and spinach mixture, add the quinoa, 1 cup of vital wheat gluten, 1/4 cup of nutritional yeast, 2 tablespoons of soy sauce, 1 teaspoon of smoked paprika, 1/2 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes. Mix to thoroughly combine.

Step Four

In a separate small bowl, whisk together 1 tablespoon of flaxseed meal and 2.5 tablespoons of water to create a flax egg. Add this to the spinach and quinoa mixture. Mix well to ensure that everything is evenly distributed.

Step Five

Form the mixture into compact sausage patties. You can use a burger press or your hands for this step. Ensure each patty is compact to prevent them from breaking while frying.

Step Six

In a large pan, heat 4 tablespoons of vegetable oil over medium heat. Fry the patties for about 3-4 minutes on each side, or until they reach a golden brown color. Ensure to flip the patties gently to prevent them from breaking.

Step Seven
