What You’ll Need
- 1 cup uncooked quinoa
- 2 cups water for cooking quinoa
- 2 large eggs, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup finely chopped red onion
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, finely minced
- 1 cup breadcrumbs
- 1 tablespoon olive oil
- 1/2 cup freshly squeezed orange juice
- 1/4 cup honey
- 1 tablespoon cornstarch
- 1 cup water for orange sauce
- Zest of 1 orange
Method
Step One
First, rinse the uncooked quinoa under cold water. Place it in a pot with two cups of water, bring it to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes, or until the quinoa is tender and the water has been absorbed. Fluff the quinoa with a fork and set it aside to cool.
