From the moment I first laid eyes on a Radish and Goat Cheese Tart, I knew it was a keeper. The beautiful arrangement of thinly sliced radishes atop creamy, indulgent goat cheese melted my heart as quickly as it melted in my mouth. My upbringing in Nebraska, with its hearty and comforting dishes, may seem worlds away from this elegant, vegetable-focused treat, but in my journey into the world of cooking, I’ve come to appreciate the sheer versatility and complexity each ingredient can bring to a dish.

Radish and Goat Cheese Tart

The Splendour of the Simple and Natural

One of the reasons why this recipe for Radish and Goat Cheese Tart is particularly special to me is that it illuminates the natural beauty of farm-fresh ingredients. Just like the corn and steak of my childhood, the radish and goat cheese are the true stars here. Neither is ever masked or hidden, but carefully nurtured to shine in their full glory.

The health benefits of radish, often neglected in our diet, are immense. This crunchy powerhouse is known for being a great source of vitamin C, aiding in digestion, and providing a good dose of hydration. When combined with the rich and creamy goat cheese, brimming with beneficial probiotics and lean protein, this tart becomes a haven of nutritional delight. It’s a perfect way to indulge your taste buds, while also feeding your body what it needs.

Ode to the Tart

In many ways, this Radish and Goat Cheese Tart echoes the quiches and pies of my childhood: the embrace of a flaky crust, the harmony of flavors, but with a refined twist. It is simple but elegant, rustic but chic. A delightful combination of farm fresh radishes, tangy goat cheese, and a flawlessly executed tart shell create this gastronomical masterpiece.

It’s a wonderful dish to serve as an appetizer or light lunch, especially when paired with a crisp salad or soup. The tart would also be a stand-out addition to any brunch spread. Be it a family gathering or a quiet Sunday at home, it’s bound to bring a touch of joy to your table.

So here’s to the embodiment of farm-to-table freshness, to the marriage of my Midwestern roots with my love for creative cooking. To the rustic charm and sublime simplicity of a showstopping Radish and Goat Cheese Tart. I hope it brings you as much joy as it brings to me.

What You’ll Need

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cubed
  • 2-3 tablespoons ice water
  • 4 oz goat cheese
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 cup thinly sliced radishes
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten for egg wash
  • Salt and pepper to taste
ALLERGENS: Wheat, Milk, Egg

Method

Step One

Start by mixing the flour and salt in a large bowl. After they are properly combined, add the cubed, chilled butter. Use your hands to combine the butter with the flour until it forms a coarse, pebble-like texture.

Step Two

Next, introduce the ice water into the mixture. Add one tablespoon at a time, gently stirring after each addition, until the dough comes together. You may not need the full 3 tablespoons, or you could possibly need a bit more. Form the dough into a disk, cover with cling wrap, and refrigerate for 1 hour.

Step Three

While the dough is chilling, preheat your oven to 375 degrees Fahrenheit. Next, in a separate bowl, combine the goat cheese, honey, olive oil, lemon juice, and a dash of salt and pepper. Mix until you achieve a smooth and integrated mixture.

Step Four

Take the chilled dough from the refrigerator. Roll it out on a lightly floured surface to about a 12-inch diameter. Transfer the rolled out dough to a baking sheet lined with parchment paper.

Step Five

Carefully spread your goat cheese mixture over the dough, leaving a roughly 2 inch border around the edge. Over this cheese mixture, distribute the thinly sliced radishes. Sprinkle the fresh thyme leaves over the radishes, then fold the outer 2 inches of the dough towards the center, over the edges of the radish and cheese filling.

Step Six

Lastly, brush the folded dough edge with the beaten egg, to give it a glaze while it bakes. Place the assembled tart in the preheated oven for 25-30 minutes or until the crust is golden and the radishes are soft and slightly caramelized. Allow to cool for a few minutes before slicing and serving. Enjoy your Radish and Goat Cheese Tart!
