Why I Love Swedish Raggmunk med fläsk
The allure of the Swedish Raggmunk med fläsk is one that inevitably captivates the palate, marrying hearty potatoes, succulent pork belly and the enticing tang of lingonberry jam. It’s a taste of Scandinavia that I dove into with enthusiasm, taken by its comforting simplicity yet choked full of flavors.
Roots in the Pacific, Heart in Global Cuisine
Having grown up in Seattle with an inherent Japanese influence in my culinary pursuits, this dish, far from my native recipes, piqued my curiosity. There’s something incredibly appealing about the contrast of crispy, pan-fried potato pancakes and the indulgent richness of thickly sliced pork belly, flavoured in a way reminiscent of my sushi rolls and seafood dishes.
I love diving into unfamiliar recipes and grasping the essence of other cooking cultures. The inspiration behind the Raggmunk med fläsk lay in its unabashed celebration of simple, honest flavors. No pretense.
Inspiration and Pairing Ideas
In my venture to perfect this recipe, I stumbled upon the works of chef Magnus Nilsson, whose dedication to Nordic cuisine is truly inspiring. The Raggmunk med fläsk, traditionally a staple in Swedish households, took me on a delicious ride into the heart of Swedish cuisine, bolstered by Nilsson’s authentic culinary expressions.
Pairing the Raggmunk med fläsk with a zesty cucumber salad or perhaps a bowl of creamed vegetables could balance out the dish’s gratifying indulgence. I see parallels with my native Japanese ‘Okonomiyaki’ – a savory pancake comprised of various ingredients where the richness of the dish is offset by contrasting flavors. It’s these exciting culinary intersections that truly broaden my cooking horizons.
Beyond being just a recipe, the Raggmunk med fläsk is an exciting exploration into a cuisine that possesses a unique charm. It’s a dish that invites you to sit down, take a hearty bite and savor the soul-warming flavors that fill your mouth.
What You’ll Need

- 2 tablespoons of butter for frying
- 1.5 pounds of thickly sliced pork belly or bacon
- lingonberry jam, to serve
Method
Step One
Grate the peeled potatoes into a large bowl.
Step Two
In another bowl, whisk the flour, milk, eggs, and salt until well combined.

Step Six
Keep the cooked pancakes warm in the oven while you prepare the pork belly.
Step Seven
In another pan, fry the pork belly slices until they’re crispy and cooked through.
Step Eight
