What You’ll Need

  • 2 whole Rainbow Trouts, gutted and cleaned
  • 8 cups of water
  • 2 bay leaves
  • 10 whole black peppercorns
  • 1 tablespoon of salt
  • 1 large onion, diced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 leek, cleaned and sliced
  • 1 pound of potatoes, diced
  • 1/2 cup of fresh dill, chopped
  • 1/2 cup of fresh parsley, chopped
  • 2 tablespoons of butter
  • Salt and black pepper to taste

Method

Step One

Start by placing the cleaned rainbow trouts in a large pot and add the 8 cups of water. Add the bay leaves, black peppercorns, and 1 tablespoon of salt. Bring this to a boil and let it simmer for 15-20 minutes.

Step Two

While the trout is simmering, you can start preparing the vegetables. Dice the onion, carrots, celery stalks, and potatoes, then clean and slice the leek.

Step Three

After the trout has been simmering for 15-20 minutes, remove them from the pot and set aside to cool. Strain the remaining stock to remove the bay leaves and peppercorns.

Step Four

In the same pot, melt the 2 tablespoons of butter and add in the diced onions, carrots, celery, leek, and potatoes. Cook this for around 10 minutes or until the vegetables become tender.

Step Five

Once the vegetables are cooked, add in the strained stock and bring it back to a simmer. Let it simmer for about 15 minutes.

Step Six

While the soup is simmering, debone the cooled trout and cut into bite-sized pieces. Add the trout back to the soup and allow it to cook for an additional 5 minutes.

Step Seven

To finish off, add the chopped dill and parsley to the soup and season with additional salt and pepper to taste. Let the soup simmer for a few more minutes to allow the flavours to infuse properly.
