What You’ll Need

  • 12 ounces of rapini (broccoli rabe)
  • 1 pound of spicy Italian sausage, casings removed
  • 1 pound of penne pasta
  • 4 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • 1/4 cup of olive oil
  • 1 cup of freshly grated Parmesan cheese
  • Salt to taste
  • Ground black pepper to taste
  • 1 lemon, zested and juiced
  • 1 cup of fresh cherry tomatoes, halved

Method

Step One

Fill a large pot with lightly salted water and bring to a rolling boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes. Drain and return to pot.

Step Two

Heat a large skillet over medium-high heat. Add the sausages and cook, breaking it up with a wooden spoon until it is browned and no longer pink, around 10 minutes. Remove the sausage with a slotted spoon and set aside.
