The Story Behind the Sorbet

Inspired by my heritage’s sky-blue Spanish coasts and Cuba’s wild tropical blooms, I wanted to create a sweet, cooling delight that would bring together notes from my dearest memories. Besides, having a penchant for dance has always made me embrace bold, vibrant, and energetic elements, whether it’s in my dance routines or my food recipes, hence this tantalizing sorbet.

Much like a dance, my Raspberry and Mint Sorbet takes its cues from a variety of influences. It mirrors the traditional Spanish sorbets, especially the lemon sorbet, famous on steamy summer afternoons, but with a tangy twist of fresh raspberries. Paired with the Caribbean’s love for bold and vibrant colors, with the vivid red of raspberries and the rich green of the mint leaves, you have a dessert that’s a true feast for the senses.

What You’ll Need

  • 1 cup of granulated sugar
  • 1 cup of water
  • 5 cups of fresh raspberries
  • 3 tablespoons of fresh lemon juice
  • 1 tablespoon of mint extract
  • Fresh mint leaves for garnish (optional)

Method

Step One

Firstly, make a simple syrup by combining the granulated sugar with water in a small saucepan. Bring it to a simmer until the sugar dissolves completely. This should roughly take about 10 minutes. Once done, remove it from heat and let it cool.

Step Two

While the syrup is cooling, puree the fresh raspberries in a blender or food processor until smooth. For a smoother sorbet, you may want to strain the raspberry puree to remove the seeds. However, this step is optional.

Step Three

Once the syrup reaches room temperature, pour it over the raspberry puree. Add the fresh lemon juice and the mint extract. Stir everything together until well amalgamated. Pour this mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Step Four

After churning, transfer the sorbet to an airtight container and be sure to cover the surface with plastic wrap. Place it in the freezer for at least 2 hours, or until it firms up to your desired consistency. If you prefer a harder sorbet, leave it in the freezer for longer.

Step Five

Serve the sorbet in bowls or cones, garnishing with a few fresh mint leaves if desired. Enjoy your Raspberry and Mint Sorbet!
