What You’ll Need

  • 2 cups water
  • 2 cups white sugar
  • 2 cups raspberries, fresh or frozen
  • 1 tablespoon lemon juice
  • 2 tablespoons vodka (optional)

Method

Step One

Combine the two cups of water and two cups of white sugar in a medium saucepan. Bring this mixture to a boil over medium-high heat, stirring until the sugar has completely dissolved.

Step Two

Once your sugar-water mixture has reached a boil, remove the saucepan from the heat and allow it to cool completely.

Step Three

While waiting for the sugar-water mixture to cool, take your two cups of raspberries and puree them until smooth. You can use either a blender or food processor for this.

Step Four

After pureeing the raspberries, strain them through a fine mesh sieve to remove any unwanted seeds. The easiest way to do this is by pressing the puree through the sieve with the back of a spoon.

Step Five

When your sugar-water mixture has cooled, combine it with your strained raspberry puree, the tablespoon of lemon juice, and the optional two tablespoons of vodka.
