What You’ll Need
- 2.5 lbs of skate, cut into portions
- 2 cloves of garlic
- 1 cup of flat-leaf parsley, chopped
- 1 cup of white wine
- 1/2 cup of extra-virgin olive oil
- 1.5 cups of green peas
- 6 green peppers, chopped
- 2 onions, finely chopped
- 1 teaspoon of sea salt
- 1/2 teaspoon of black pepper
- 1/2 cup of water
- 1 cup of all-purpose flour
Method
Step One
Start by patting the skate dry with paper towels. Season the skate on both sides with salt and pepper.
Step Two
Next, heat the olive oil in a large saucepan over medium heat. Dust the skate in flour and shake off the excess, then place it in the pan. Cook the fish on each side for about 3-4 minutes until golden brown and cooked through. Remove the skate from the pan and set it aside.
Step Three
In the same pan, add in the onions, garlic, and green peppers. Sauté until they become soft and fragrant. Add in the peas, and cook for a few more minutes.
Step Four
Then, stir the chopped parsley into the saucepan. Pour in the white wine slowly, let it simmer for one minute to let the alcohol evaporate.
Step Five
Add the water to the pan and bring the mixture to a simmer. Season the sauce with salt and pepper.

Gently place the skate back into the pan, immersing it in the green sauce. Let the skate cook in the sauce for an additional 7-10 minutes, or until it is cooked to your preferred level of doneness.
