Why I Love Spanish Raya in Green Sauce

Raya in Green Sauce, a traditional Spanish dish bursting with fresh and vibrant flavors! This hearty and tasty meal feels like a refreshing dip into the culinary traditions of Spain, and while my forte may be New England seafood, embracing international flavors is a journey I’m always eager to embark on. In this recipe, the key ingredient – skate this time, departs from my usual focus on lobsters and clam chowder. Raya in Green Sauce

A Taste Adventure with Every Bite

The first time I cooked Raya in Green Sauce, I was immediately captivated by the aromatic blend of skate, garlic, and parsley, not to mention the crisp white wine that adds a refined, flavorful touch to the mix. The fusion of green peas, peppers, onions, and a hint of sea salt and black pepper created an explosion of flavors that is simply unforgettable. The dish’s beauty reflects a captivating palette of greens, offering a visual feast, before you even have your first taste.

The Guide of A Culinary Maestro

Now, I can’t talk about Spanish cuisine without giving a nod to my inspiration, Chef José Andrés. An internationally recognized culinary innovator, author, and owner of ThinkFoodGroup, Andrés’s flavorsome Spanish dishes have been a light guiding my own culinary explorations in Spanish cookery. You can check out his ingenious dishes and recipes on his official website.

Perfect Pairings

For a memorable Spanish feast, might I suggest pairing this dish with an appetizer of Gazpacho or perhaps some Patatas Bravas? The refreshing cold soup or the spicy potatoes will provide a delightful contrast to the hearty Raya in Green Sauce. And if you want a comprehensive Spanish experience for your taste buds, end your meal with a sweet note of Flan or Churros.

Despite my roots lovingly anchored in the breezy flavors of New England, embracing the culinary treasures of other cultures and regions is what makes cooking a joyous adventure that I’m always ready to embark on. I hope you’d enjoy the journey as much with this delicious Raya in Green Sauce.

What You’ll Need

  • 2.5 lbs of skate, cut into portions
  • 2 cloves of garlic
  • 1 cup of flat-leaf parsley, chopped
  • 1 cup of white wine
  • 1/2 cup of extra-virgin olive oil
  • 1.5 cups of green peas
  • 6 green peppers, chopped
  • 2 onions, finely chopped
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of water
  • 1 cup of all-purpose flour
ALLERGENS: Fish, Garlic, Wine, Peas, Peppers, Onions, Gluten

Method

Step One

Start by patting the skate dry with paper towels. Season the skate on both sides with salt and pepper.

Step Two

Next, heat the olive oil in a large saucepan over medium heat. Dust the skate in flour and shake off the excess, then place it in the pan. Cook the fish on each side for about 3-4 minutes until golden brown and cooked through. Remove the skate from the pan and set it aside.

Step Three

In the same pan, add in the onions, garlic, and green peppers. Sauté until they become soft and fragrant. Add in the peas, and cook for a few more minutes.

Step Four

Then, stir the chopped parsley into the saucepan. Pour in the white wine slowly, let it simmer for one minute to let the alcohol evaporate.

Step Five

Add the water to the pan and bring the mixture to a simmer. Season the sauce with salt and pepper.

Step Six

Gently place the skate back into the pan, immersing it in the green sauce. Let the skate cook in the sauce for an additional 7-10 minutes, or until it is cooked to your preferred level of doneness.

Step Seven

Remove the pan from heat. Serve the Raya in Green Sauce garnished with extra fresh parsley, if desired. Serve hot and enjoy!
