There’s something inherently nostalgic about a timeless classic like our Red Onion Chutney. It’s a delightful recipe, which for me, is reminiscent of sun-drenched Californian valleys, lush with ripe, colorful produce. In this recipe, the humble red onion transforms into a versatile gem that elevates not just the flavor, but also the nutritional content of every dish it graces.

A Rich Blend of Flavors

What I particularly adore about this Red Onion Chutney recipe is its brilliant complexity – courtesy of simple, yet impactful ingredients. The sweetness of the white and brown sugars enhances the natural flavors of the red onion, while the red wine lends depth and richness. The chili flakes, on the other hand, offer a delightful hit of heat that makes every spoonful a vibrant experience. And of course, the olive oil ties it all together, adding a subtle note of silkiness to the texture.

Health Benefits & Pairings

Not just a taste sensation, this chutney boasts a host of health benefits too. Onions are a fantastic source of antioxidants, vital for our overall well-being. They are believed to support heart health, thanks to their richness in sulfur compounds and flavonoid antioxidants. Additionally, the antioxidant quercetin, found in onions, is known for its anti-inflammatory effects. They’re also low in calories yet high in vitamins and minerals, making them a super addition to any diet.

As for pairings, this chutney is incredibly versatile. The sharp, tangy flavor pairs wonderfully with a nice piece of mature cheddar or a chunk of crusty bread. A generous dollop alongside a hearty roast beef or as an accompaniment to a well-prepared pork chop enhances the savoriness of the meats. Alternatively, spread it onto your morning toast for a fresh twist on a breakfast staple.

To all my fellow gourmet aficionados, I invite you to relish in the balance of this Red Onion Chutney recipe – a beautiful meander between sweet, tangy, and spicy. A reflection of my love for a health-conscious yet comforting culinary experience, I hope this chutney brings you joy with every bite, just as it does for me.

What You’ll Need

  • 3 large red onions
  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 1 cup of red wine
  • 1 cup of red wine vinegar
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili flakes
  • 2 tablespoons of olive oil
  • Salt to taste
ALLERGENS: Sulfites (in red wine, red wine vinegar), Garlic

Method

Step One

Begin by peeling the red onions and slicing them thinly. Set them aside for later.

Step Two

In a large saucepan, heat the olive oil over medium heat. Add the sliced onions to the pan, mingling the onions with the oil. Allow the onions to cook for about 10-15 minutes, or until they become translucent.

Step Three

Add the minced garlic and chili flakes to the onions. Continue to cook the mixture for another 2-3 minutes, stirring continuously to prevent the garlic from burning.

Step Four

Next, add in both the white and brown sugar, stirring well to make sure all the onions are coated. Cook this mixture down for about 5 minutes, or until the sugar has completely dissolved into the onions and garlic.

Step Five

Pour in the red wine and red wine vinegar to the pan. Stir the mixture well and bring it to a boil. Once boiling, reduce the heat and let it simmer for about 30-40 minutes, or until the mixture thickens and takes on a glossy appearance.

Step Six

Finally, taste the chutney and add salt as necessary. Allow the mixture to cool before transferring it to an airtight jar. Store in the refrigerator and enjoy your homemade red onion chutney!
