What You’ll Need
- 2 cups of Red rice
- 2 tbsp of Red chili powder
- 2 tbsp of Oil
- 1 Red bell pepper, sliced
- 1 Green bell pepper, sliced
- 1 Yellow bell pepper, sliced
- 1 large Onion, sliced
- 2 cloves of Garlic, minced
- 1 cup of Broccoli florets
- 1 Carrot, sliced into thin rounds
- 2 stalks of Spring onions, sliced
- Salt to taste
- 1/2 cup of Soy sauce
- 1/4 cup of Sesame seeds
Method
Step One
Start by rinsing the red rice under cold water until the water runs clear. Place the rice in a pot with three cups of water, bring to a boil, then reduce the heat to low, cover and let it simmer for about 20 minutes or until the rice is cooked through. Once done, set aside to cool.
Step Two
While the rice is cooking, heat the oil in a large wok or frying pan over medium-high heat. Add the minced garlic and sauté until it turns golden brown.
Step Three
Add the sliced onion to the pan and sauté it until it becomes translucent. Next, add the sliced red, green and yellow bell peppers, and stir fry for a couple of minutes until they begin to soften.
Step Four
Now add the broccoli florets and the thinly sliced carrots to the pan, keep stirring to prevent them from burning. Sauté these vegetables until they are crisp-tender.
Step Five
Add the red chili powder to the pan and give everything a good stir to make sure all the vegetables are well coated with the spice. Add salt to taste.
Step Six
Once the vegetables are fully cooked, add in the cooked red rice. Stir well to combine the rice with the vegetables and spices. Let it cook for a few more minutes so the rice can absorb the flavors.
Step Seven
Now, add the soy sauce and the sliced spring onions to the pan. Stir everything well to combine. Garnish with the sesame seeds before serving.
