There are many reasons to love our Red Rice Powder Frittata, a dazzling display of color, pinpointing the intersection of health and hearty comfort. Drawn from the sun-kissed valleys of California, and complementing West Coast’s refreshing health-consciousness, this dish is brimming with nourishment. It’s a delightful dance of flavorsome textures and vibrant colors—the bob of diced apples, the pop of authentic red rice, and the creaminess of crumbled feta cheese, all encompassed within the warm hug of baked eggs. It’s a dish that I find myself coming back to, time and again.

Red Rice Powder Frittata

A Frittata with Health Benefits Galore

Not only does the Red Rice Powder Frittata play a symphony of flavors on your palate, but it’s also a powerhouse of nutrition, aligning beautifully with my commitment to health-conscious, delicious American comfort food. The eggs and feta provide valuable protein, aiding in muscle growth and repair. The fresh vegetables and apple lend a good dose of vitamins and fiber while the red rice and red rice powder contribute a good share of antioxidants that help protect the body against free radicals. Also, the olive oil in this recipe provides a heart-healthy dose of monosaturated fats.

Perfect Pairings and Flexible Adaptions

The beauty of this dish lies not just in its gastronomical appeal, but also in its flexibility. The Red Rice Powder Frittata shares a close kinship with the classic Spanish Tortilla and Italian Frittata, sharing their versatility and comfort. It can be enjoyed with a fresh garden salad, a side of avocado toast, or even with a glass of Californian wine—perhaps a crisp Chardonnay to complement its flavors. And should you feel adventurous, you can always adapt the recipe using other fresh, in-season fruits or vegetables, which is something I often do, given the wide array of fresh produce available in my Californian backyard.

So give this recipe a try. Whether you’re hosting a brunch, prepping a healthy lunch, or needing a comforting dinner, the Red Rice Powder Frittata is a dish that promises both nourishment and satisfaction, just as I always intend my recipes to be.

A little color, a dash of comfort, and a spoonful of health—that’s what this dish promises. Just like my beloved California, it’s fresh and vibrant. Can’t wait for you to try it.

Happy cooking!

What You’ll Need

  • 8 large eggs
  • 1 cup red rice
  • 1/4 cup olive oil
  • 2 teaspoons red rice powder
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium-sized apple, diced
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper to taste
ALLERGENS: Eggs, red rice

Method

Step One

First, preheat your oven to 350 degrees Fahrenheit. While the oven is preheating, cook the red rice according to the package instructions and set it aside.

Step Two

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent. This should take about 5 minutes. Be sure to stir them occasionally to prevent them from burning.

Step Three

Next, add the diced green and red bell peppers to the skillet and continue cooking for another 7-8 minutes. The peppers should soften slightly but still maintain a bit of crunch.

Step Four

Add the spinach and cook for another 2-3 minutes, just until the spinach is wilted. Remove the skillet from heat and let the mixture cool slightly.

Step Five

In a large bowl, beat together the 8 eggs. Add the red rice powder, cooked red rice, sautéed vegetables, halved cherry tomatoes, and diced apple. Season the mixture with salt and black pepper to taste. Mix everything together until they’re well combined.

Step Six

Transfer the egg and vegetable mixture into a greased 9-inch pie dish. Sprinkle the crumbled feta cheese evenly on top.

Step Seven

Place the pie dish into the preheated oven and bake for about 35-40 minutes. The frittata should be set in the middle and slightly golden on top.

Step Eight

Once done, remove the frittata from the oven and let it cool for a few minutes before slicing and serving. Enjoy your Red Rice Powder Frittata!
