What You’ll Need


  • 6 medium potatoes
  • 2 tablespoons of red rice powder
  • 3 tablespoons of olive oil
  • 2 teaspoons of sea salt
  • 1 teaspoon of freshly ground black pepper
  • 1 tablespoon of minced garlic
  • 2 tablespoons of finely chopped fresh herbs (Thyme, rosemary, parsley)

Method


Step One

Preheat your oven to 400°F (200°C). Wash and cut your potatoes into even-sized chunks. Keep the pieces relatively large, for instance if you’re using medium potatoes, an eighth of a potato is a good chunk size.

Step Two

In a large bowl, combine the red rice powder, sea salt, freshly ground black pepper, minced garlic, and finely chopped fresh herbs. Mix well to ensure all ingredients are evenly distributed.

Step Three

Next, add the potato chunks into the bowl. Pour in the olive oil, ensuring all pieces are well-coated in the spice mixture. Toss everything together until the potatoes are evenly coated in the oil and spice mixture.

Step Four

Arrange the potato chunks on a baking tray, making sure they’re in one layer and not overlapping. This helps them to roast evenly and become crisp.

Step Five

Bake the potatoes in the preheated oven for about 50-60 minutes. Halfway through the cooking time, use a spatula to turn the potatoes, so that they brown and crisp up on all sides.
