What You’ll Need

  • 3 cups of cooked rice
  • 2 tablespoons of vegetable oil
  • 1 cup of chopped red bell pepper
  • 1 cup of chopped yellow bell pepper
  • 1 cup of finely chopped onion
  • 2 cloves of garlic, minced
  • 1 tablespoon of finely chopped ginger
  • 2 cups of mixed fresh fruit (such as pineapple, mango, and apple), chopped
  • 1 1/2 cups of chopped dulse seaweed
  • 1/2 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of honey
  • 1/4 teaspoon of red pepper flakes (optional)
  • 2 tablespoons of sesame seeds
  • 2 green onions, thinly sliced

Method

Step One

Before you start, make sure that your rice is cooked and ready. If it isn’t, quickly cook it according to the package instructions, then set it aside.

Step Two

Heat the vegetable oil in a large pan or wok over medium heat. Once the oil is hot, add the chopped red and yellow bell peppers, finely chopped onion, minced garlic, and finely chopped ginger. Stir fry these ingredients until they become fragrant and the onion turns translucent. This should take about 5-7 minutes.

Step Three

Add the mixed fresh fruit to the pan and stir fry for another 5 minutes, or until the fruit is heated through. This will add a sweet and tangy flavor to your stir fry.

Step Four

Next, add the chopped dulse seaweed to the pan and continue to stir fry for another 2-3 minutes. The dulse will add a hearty and savory flavor to the dish.

Step Five

Now, it’s time to add the cooked rice to the pan. Pour in the soy sauce, rice vinegar, and honey over the top, and stir everything together to evenly distribute the ingredients and flavors. Add the red pepper flakes if you want a bit of spice in your stir fry. Cook this for another 5 minutes, or until everything is heated through.

Step Six

The finishing touch is the sesame seeds and thinly sliced green onions. Sprinkle these over the top of your stir fry, then give everything one last good stir to combine.
