Inspired by the vibrant flavors of my Italian-American household growing up in New Jersey, every dish I create has a taste of family tradition. Today, I introduce you to the Rice Paddy Herb and Chicken Stir Fry – an easy-to-make, delectable fusion of flavors that’s a delight for both the eyes and the palate.

Stir Fry Dish

A Touch of Tropical Delight

My love for this recipe lies in its ability to bridge the flavors of the East and the West. Picture this: tender chicken breast mixed with the fragrant herbs and, of course, the refreshing notes of pineapple and mango. Reimagining the conventional stir-fry, my recipe draws upon tropical fruits to give it that unforgettable, zesty twist. This dish closely curls around the taste buds similar to some Polynesian cuisines like Hawaiian Chicken stir-fry or a Thai Mango Chicken.

A Meal Bursting with Good Health

This recipe goes beyond merely exciting your taste buds; it nourishes your body, too. As a grandfather who enjoys hiking, knowing the health benefits of my meals is crucial for me. Chicken, as many of us know, is a great source of lean, low-fat protein that contributes to muscle growth and development. The fresh vegetables add an abundance of vitamins and minerals, supporting a well-functioning immune system. As for the rice paddy herb, its rich in antioxidants and has anti-inflammatory properties. But the real icing on the cake? The tropical fruits! Besides being a sweet treat, fruits like pineapples and mangoes are packed with essential vitamins, and have been linked to improved digestion and heart health. And let’s not forget, so pleasantly refreshing on a warm day!

A Stir Fry Companion

Our Rice Paddy Herb and Chicken Stir Fry, with its savory, slightly sweet, and vibrant flavors, complements well with a light side dish like a cucumber salad or a cold glass of crisp white wine. For a wholesome meal experience, you could also pair it with a serving of jasmine rice, an excellent likeness to the traditional Oriental meal setup.

Alright, enough of the talk. Let’s get those aprons on and get started. Excited? Well, you should be because you’re about to cook a stir-fry that’s beyond the ordinary!

What You’ll Need

  • 2 lbs of chicken breasts, cut into thin strips
  • 2 tablespoons of vegetable oil
  • 1 cup of rice paddy herb, finely chopped
  • 2 cloves of garlic, minced
  • 1 large onion, thinly sliced
  • 2 bell peppers, sliced
  • 1 cup of carrot, julienne
  • 1 cup of sugar snap peas
  • 1/4 cup of soy sauce
  • 1 tablespoon of ground black pepper
  • 1.5 cups of cooked jasmine rice
  • 1/4 cup of pineapples, diced
  • 1/4 cup of mangoes, diced
ALLERGENS: chicken, vegetable oil, garlic, soy sauce

Method

Step One

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken breasts strips and fry them until they are browned and cooked thoroughly. This process should take about 7-8 minutes. Once ready, remove the chicken from the skillet and set it aside.

Step Two

In the same skillet, add the minced garlic, sliced onion, and bell peppers. Cook these vegetables until they become slightly tender. Stir them continuously to prevent them from getting burnt.

Step Three

Next, add in the carrots, sugar snap peas, and rice paddy herb. Continue to stir-fry for about 2-3 minutes until the veggies are crisp-tender.

Step Four

Now add the cooked chicken back into the skillet. Stir in the soy sauce and ground black pepper as well. Mix everything well so that the chicken and veggies are thoroughly coated with the seasonings.

Step Five

Add the cooked jasmine rice, diced pineapples and mangoes into the skillet. Stir all the ingredients until they are well combined. Let the mixture cook for another 2-3 minutes, allowing the flavors to meld together.

Step Six

Once everything is evenly mixed and heated, your Rice Paddy Herb and Chicken Stir Fry is ready. Serve it hot and enjoy this flavorful, hearty dish.
