What You’ll Need
- 2 lbs of chicken breasts, cut into thin strips
- 2 tablespoons of vegetable oil
- 1 cup of rice paddy herb, finely chopped
- 2 cloves of garlic, minced
- 1 large onion, thinly sliced
- 2 bell peppers, sliced
- 1 cup of carrot, julienne
- 1 cup of sugar snap peas
- 1/4 cup of soy sauce
- 1 tablespoon of ground black pepper
- 1.5 cups of cooked jasmine rice
- 1/4 cup of pineapples, diced
- 1/4 cup of mangoes, diced
Method
Step One
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken breasts strips and fry them until they are browned and cooked thoroughly. This process should take about 7-8 minutes. Once ready, remove the chicken from the skillet and set it aside.
Step Two
In the same skillet, add the minced garlic, sliced onion, and bell peppers. Cook these vegetables until they become slightly tender. Stir them continuously to prevent them from getting burnt.
Step Three
Next, add in the carrots, sugar snap peas, and rice paddy herb. Continue to stir-fry for about 2-3 minutes until the veggies are crisp-tender.
Step Four
Now add the cooked chicken back into the skillet. Stir in the soy sauce and ground black pepper as well. Mix everything well so that the chicken and veggies are thoroughly coated with the seasonings.
Step Five
Add the cooked jasmine rice, diced pineapples and mangoes into the skillet. Stir all the ingredients until they are well combined. Let the mixture cook for another 2-3 minutes, allowing the flavors to meld together.
Step Six
Once everything is evenly mixed and heated, your Rice Paddy Herb and Chicken Stir Fry is ready. Serve it hot and enjoy this flavorful, hearty dish.
