What You’ll Need

  • 3 to 4 lbs beef roast
  • Salt and pepper for seasoning
  • 2 tablespoons olive oil
  • 6 cloves of garlic, minced
  • 2 large onions, sliced
  • 2 cups carrot slices
  • 2 stalks celery, chopped
  • 6 sprigs of fresh boldo leaves, finely chopped
  • 2 cups beef broth
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Method

Step One

First, preheat your oven to 325 degrees Fahrenheit. As the oven heats, season the beef roast liberally on all sides with salt and pepper.

Step Two

Next, heat olive oil in a large pan over medium-high heat. Once heated, add the beef roast and sear on all sides until browned. This should take about 5-7 minutes per side. Once the roast is browned, remove it from the pan and set it aside.

Step Three

In the same pan, add the minced garlic, onion slices, carrot slices, and chopped celery. Sauté for about 10-12 minutes, or until vegetables are softened and onions are slightly caramelized.
