What You’ll Need

  • 3 pounds of round roast beef
  • 4 cloves garlic, minced
  • 1 tablespoon of olive oil
  • Salt to taste
  • Black pepper to taste
  • For the Peppercorn Sauce:
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 tablespoons whole black peppercorns, crushed
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt to taste

Method

Step One

Once the beef is done roasting, remove it from the oven and let it rest for about 10 minutes. This will allow the juices to redistribute back into the roast beef for a more flavorful and juicy result.

After the beef has rested, slice it thinly and serve it with the peppercorn sauce.
