As a Louisiana native steeped in French roots, my palate is equally enamored with the robustness of Creole cuisine and the sophistication found in French dishes. It’s a genuine joy to find recipes that honor both these culinary traditions as perfectly as this delightful dish – Roasted Brussels Sprouts with Brown Mustard and Bacon.

Roasted Brussels Sprouts with Brown Mustard and Bacon

A Blend of Soul and Style

This recipe resonates with me on a deep level, granting me the chance to weave the tastes of my heritage into an irresistible delight. Its complexity lies in the pronounced contrast of flavors and textures. The Brussels sprouts lend a subtle bitterness, beautifully accompanied by the smoky bacon’s richness and the earthy brown mustard’s tang. Like a New Orleans’ jazz tune or a carefully brewed French café au lait, every element of this dish vibrates with a unique rhythm that harmoniously coalesces into an enticing symphony.

Healthful Indulgence

Beyond being a gastronomic delight, the Roasted Brussels Sprouts with Brown Mustard and Bacon is also exceptionally nutritious. Brussels sprouts are packed with vitamins and fiber, while mustard provides antioxidants and anti-inflammatory benefits. The addition of olive oil introduces heart-healthy monounsaturated fats into the mix. It’s a gratifying juxtaposition of indulgence and well-being, and this balance is a testament to the possibilities of flavorful, nutritious fare. This recipe bears a delightful similarity to the classic Roasted Brussels Sprouts with Garlic, and pairs magnificently with a robust steak or a delicate roast chicken. It is this versatility, the mingling of decadence and healthfulness, that truly underscores why I love the Roasted Brussels Sprouts with Brown Mustard and Bacon dish so much.

What You’ll Need

  • 1.5 pounds of Brussels sprouts
  • 1 cup of brown mustard
  • 6 slices of thick-cut bacon
  • 3 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
ALLERGENS: Mustard, Bacon

Method

Step One

Preheat your oven to 400 degrees F (200 degrees C). While the oven is heating, trim the bottoms of the Brussels sprouts and slice them in half lengthwise.

Step Two

Cook the bacon slices in a large skillet over medium-high heat until they’re crispy. Once done, remove them from the skillet and set aside to cool. Reserve some of the bacon drippings in the skillet.

Step Three

Add your olive oil to the skillet with the bacon drippings. Once this mixture is hot, add the sliced Brussels sprouts. Season them with salt and pepper to taste. Cook them until they are light golden brown on the cut side, which should take around 5 minutes.

Step Four

Transfer your Brussels sprouts from the skillet to a baking sheet. Try and ensure that they’re cut-side down as they’ll get crispier this way. Roast them in the preheated oven until they’re tender and well browned. This will take about 20 to 25 minutes.

Step Five

While the Brussels sprouts are roasting, cut the cooled bacon into small pieces. Also, in a small bowl, mix together your brown mustard and a finger pinch of salt and pepper.

Step Six

Once the Brussels sprouts are done roasting, remove them from the oven and put them in a large bowl. Add the chopped bacon and the mustard mixture. Toss all these ingredients together until the Brussels sprouts are coated evenly.

Step Seven

Return the Brussels sprouts to the baking sheet and roast them in the oven again for about 5 minutes. This will allow the mustard coating to become slightly crispy. Once done, remove them from the oven and serve while hot.
