What You’ll Need
- 3 small calabazas pumpkins (about 18 ounces each)
- 3 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 cup fresh cranberries
- 1 medium red apple, cored and chopped
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup maple syrup
- 1/4 cup chopped pecans
- 1/2 cup crumbled feta cheese
- Fresh herbs for garnish (optional)
Method
Step One
Preheat your oven to 375°F (190°C). While the oven is heating, wash your calabazas pumpkins thoroughly and cut them into halves. Remove the seeds and outmost fibrous part.
