Roasted Carolae with Thyme

The Joys of Carolae

Carolae, traditionally found in West African diets, is a staple that has become close to my heart. It’s not just the earthy flavor and velvety texture I adore, but the richness of nutrients it offers. Bursting with antioxidants, it’s just the thing my body craves to keep healthy. Pair it with warm, aromatic thyme – a herb known not just for its culinary use, but for its medicinal benefits too – and you have a recipe that’s nutritious as much as it is flavorful.

Celebrating Fusion

I cherish the Roasted Carolae with Thyme recipe for doing what I enjoy most – creating a dialogue between the Southern and West African culinary landscapes I call home. The Carolae fruit, sun-baked sweetness of honey, the aromatic earthiness of thyme and a hint of classic Southern spices come together to tell a story of Afro-Southern fusion in every bite. Just like other classic roasted vegetable dishes like slow-roasted sweet potatoes or spiced roasted squash, it offers the comfort and heartiness we all crave.

While it’s a feast on its own, my Roasted Carolae with Thyme also pairs beautifully with a variety of dishes. It’s a memorable side to a succulent roast chicken or a simple baked fish, and even works wonders as a flavorful accompaniment on salad nights.

Every time I cook up this recipe, I remember my roots, traditions, and the incredible fusion of flavors I grew up enjoying. It is a fusion I strive to share with everyone, bringing the best Afro-Southern culinary experiences to your table. So if you want a dinner that is a true nourishing delight, do try out my Roasted Carolae with Thyme. It’s a taste of my world, brimming with deliciousness and wholesome goodness, and I can’t wait for you to experience it.

What You’ll Need

  • 6 whole Carolae fruit
  • 1 tablespoon of olive oil
  • 2 tablespoons of honey
  • 6 springs of fresh thyme
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
ALLERGENS: None

Method

Step One

Preheat your oven to 400 degrees Fahrenheit. While your oven is heating, prepare your Carolae fruits by cutting off the tops and scooping out the insides. Set aside.

Step Two

Take a baking sheet and place the prepared Carolae fruit on it. Drizzle the fruit with olive oil ensuring the insides are coated well.

Step Three

In a small bowl, mix together the honey, thyme, cinnamon, nutmeg, brown sugar, salt, and black pepper. This will form your spice paste.

Step Four

Using a spoon, distribute this spice paste evenly inside each Carolae fruit, making sure the interiors are well-coated.

Step Five

Roast the fruit in the preheated oven for around 30 minutes, or until the Carolae is caramelized and tender, checking regularly to prevent burning. The fruit should be slightly charred at the edges.

Step Six

Remove from the oven and allow them to cool. Serve warm and enjoy your Roasted Carolae with Thyme!
