- 1 whole chicken (about 4-5 lbs)
- 2 tablespoons Dorrigo pepper
- 1 tablespoon kosher salt
- 1 tablespoon olive oil
- 1 lemon, halved
- 4 cloves garlic, peeled
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 large onion, cut into wedges
- 4 whole carrots, peeled and cut into chunks
