What You’ll Need

  • 1 Roasting chicken, around 6 pounds
  • 2 Bunches of leaf celery
  • 1 Lemon
  • 6 cloves of garlic, peeled
  • 4 tablespoons of Olive oil
  • Salt and ground black pepper to taste
  • 2 cups of chicken broth
  • 1 teaspoon of dried thyme leaves
  • 1 teaspoon of dried rosemary leaves
  • 1 teaspoon of dried oregano
  • 2 tablespoons of unsalted butter
  • Optional: fresh sprigs of herbs, such as thyme, rosemary and oregano, for garnish
ALLERGENS: Chicken, Garlic, Olive oil, Chicken broth, Butter

Method

Step One

Preheat your oven to 425°F. Meanwhile, prepare the chicken by ensuring it’s thoroughly cleaned and pat dry with paper towels.

Step Two

In the chicken’s cavity, insert the lemon (which should be halved), peeled garlic cloves and a handful of leaf celery. Make sure to tuck the wings under the chicken and tie the legs together with kitchen twine.

Step Three

Place your chicken on a rack in a roasting pan. Drizzle it with the 4 tablespoons of olive oil, ensuring it’s evenly coated all around.

Step Four

Season the chicken liberally with salt and ground black pepper to taste. Sprinkle the dried thyme leaves, rosemary, and oregano evenly over the chicken.

Step Five

Place the roasting pan in the preheated oven and roast the chicken for about 1 to 1.5 hours, or until the juices run clear when the thickest part of the thigh is pierced with a skewer.

Step Six

While the chicken is roasting, roughly chop the remaining bunch of leaf celery and set aside.

Step Seven

Remove the chicken from the oven and transfer it to a serving platter. Cover it loosely with aluminium foil and allow it to rest for approximately 15 minutes.

Step Eight

While the chicken is resting, set the roasting pan over medium heat on the stovetop. Add the chicken broth, chopped celery, and 2 tablespoons of unsalted butter to the pan. Stir well, making sure to scrape the bottom of the pan to dislodge any browned bits. When the broth comes to a simmer, allow it to cook for around 5 minutes.

Step Nine

Uncover the chicken and pour the brothy celery mixture over it. Garnish with optional fresh sprigs of herbs if you like before serving. Enjoy your roasted chicken with leaf celery.
