This mouth-watering Roasted Chinese Artichokes with Garlic and Thyme dish delivers that in spades. Each Chinese artichoke (a lesser-known cousin to the globe artichoke most of us are used to) comes out of the oven crispy, tender, and imbued with the earthy aroma of fresh thyme and zesty undertones of lemon. The addition of garlic brings a comforting familiarity, and the result is an incredibly satisfying, bold veggie dish – much like our hearty mountain fare.

What You’ll Need

  • 1.5 pounds of Chinese Artichokes
  • 3 tablespoons of olive oil
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 6 cloves of garlic, minced
  • 2 tablespoons of fresh thyme leaves
  • 1 lemon, zested and juiced
ALLERGENS: Garlic

Method

Step One

Preheat your oven to 400 degrees F (200 degrees C). During the preheating time, you can wash and clean your Chinese Artichokes, making sure to remove any residual dirt under cold running water.

Step Two

Next, place the cleaned Chinese Artichokes into a large mixing bowl. Drizzle the 3 tablespoons of olive oil over them. Mix well to ensure all the Artichokes are properly coated with the olive oil.

Step Three

Now, season your prepared Artichokes by sprinkling over the sea salt and freshly ground black pepper. Also, add in the minced garlic, fresh thyme leaves. Toss again to distribute the seasonings and flavorings.

Step Four

Transfer the seasoned Chinese Artichokes onto a large, rimmed baking sheet. Spread them out in an even, single layer to ensure they all roast evenly. Place the baking sheet into the preheated oven.

Step Five

Allow the Chinese Artichokes to roast in the preheated oven for about 20 to 25 minutes or until they are golden brown and tender.

Step Six

While the Chinese Artichokes are roasting, prepare your lemon by zesting it and then juicing it. Once the Artichokes are done roasting, immediately sprinkle the lemon zest over them and drizzle the lemon juice on top while they are still hot.

Step Seven

Toss the Roasted Chinese Artichokes once more to distribute the fresh lemon flavor into the dish. Taste for seasoning, adjust if necessary and serve warm.
