If you’re searching for a way to bring a touch of bright, zesty flavor into your everyday fare, the Roasted Cod with Lemon, Capers, and Parsley is definitely a recipe worth trying. This dish, firmly anchored by beautifully flaky cod fillets, marries the tang of lemons and capers with the freshness of chopped parsley in a symphony of flavors that’s irresistibly mouthwatering. As a native of New York City, I’ve always been a fan of unexpected fusion and diversity – just like the city’s culinary scene. This dish pays homage to that sentiment.
A Nutrient Rich Delight
While a dish’s taste is certainly important, I believe food is about more than just pleasing our palates; it’s also about nurturing our bodies. This Roasted Cod with Lemon, Capers, and Parsley is an ideal example of that. Cod, the star of this recipe, is an amazing source of lean protein and packed with several essential nutrients like Vitamin B12 and Iodine. Moreover, lemons bring a high dose of Vitamin C to the table while parsley offers an impressive array of antioxidants. Extra virgin olive oil provides heart-healthy mono-unsaturated fats, making this a dish that is not just tasty, but also contributes to your wellbeing.
Recipe Pairing Suggestions
This lemon and caper-infused dish carries a Mediterranean vibe, and it pairs seamlessly with several sides. If you’re a fan of vegetable couscous or a simple tomato-cucumber salad, consider making them as an accompaniment. The bright, crisp flavors perfectly complement the zesty cod. A light-bodied white wine, particularly one with citrus notes, would round off the meal beautifully.
Just as New York celebrates a myriad of different cultures and culinary influences, this recipe brings together a medley of flavors from the Mediterranean. It’s this diversity in food that I love and continue to explore in my kitchen. And with the Roasted Cod with Lemon, Capers, and Parsley, I invite you to join me on this gastronomic journey. Enjoy!
What You’ll Need
- 6 Cod fillets (6 ounces each)
- Salt (to taste)
- Black pepper (to taste)
- 6 tablespoons extra-virgin olive oil
- 2 lemons (1 thinly sliced, 1 juiced)
- 2 tablespoons of capers
- 1/2 cup fresh parsley leaves, chopped
- 3 cloves garlic, chopped
Method
Step One
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). While the oven is heating, season your cod fillets with salt and black pepper to taste.
Step Two
Over medium heat, warm up a large ovenproof frying pan. Add the extra-virgin olive oil to the pan. Once the oil is warm, add your seasoned cod fillets. Cook for about 4 to 5 minutes until the cod is lightly browned.
Step Three
After lightly browning the fish, add the thinly sliced lemon and capers to the pan. Let everything cook for another 2 minutes. Afterwards, transfer the pan to the preheated oven.
Step Four
In the oven, let the fish roast for about 10 – 12 minutes, or until the cod is fully cooked and flakes easily with a fork.
Step Five
While the fish is in the oven, prepare the parsley and garlic mixture. In a small bowl, combine the chopped fresh parsley, chopped garlic, and the juice of the remaining lemon. Mix everything together.
Step Six
Once the fish is fully cooked, take it out of the oven. Drizzle the parsley and garlic mixture over the cooked fish. Serve your roasted cod with lemon, capers, and parsley immediately while it’s still hot. Enjoy!
