Reimagining Local Flavors

Reminiscent of a summer’s bounty, and brimming with fresh ingredients, this Roasted Hungarian Wax Peppers Dip is my love letter to local produce. When tomatoes are at their ripest, when onions bear the perfect balance of sweetness and bite, when cilantro, freshly picked, adds the addictive punch to any dish, a dip like this truly comes to life. Picture this as the East Coast meeting Hungary through a gastronomic lens!

A Celebration of Health

And while this recipe is a party for your taste buds, it’s equally a celebration of your health. When you combine Hungarian wax peppers, a source of vitamin C, with olive oil, rich in heart-healthy monounsaturated fats – you’re looking at a dip that’s as good for you as it is delicious. Add into the mix the antioxidant powers of garlic, the creaminess of Greek yogurt – one of the few dietary sources of probiotics, and the richness of feta cheese, you’re essentially dipping into a bowl of convenience and nutrition.

Talking of cheese, have I mentioned the wonderful, tangy undercurrent that feta lends to this dish? While you might be tempted to think blue cheese or even cream cheese when it comes to dips, let me assure you that feta works wonders in this recipe — not to mention the added calcium boost.

This dish shines on its own, but it also pairs wonderfully with a variety of snacks and mains. Try it with toasted pita chips, spread over a grilled chicken sandwich or simply as a salsa for your tacos or nachos. What You’ll Need

  • 8 Hungarian wax peppers
  • 3 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 cups of fresh tomatoes, diced
  • 1 cup of red onion, finely chopped
  • 1 tablespoon of fresh lemon juice
  • 1 tablespoon of apple cider vinegar
  • 1 cup of chopped cilantro
  • 1 cup of cream cheese, softened
  • 1/2 cup of Greek yogurt
  • 1/2 cup of feta cheese, crumbled
ALLERGENS: Milk

Method

Step One

Preheat your oven to 450°F (232°C). Take your Hungarian wax peppers and coat them in one tablespoon of olive oil. Arrange them on a baking sheet and roast in the oven until they are blistered and slightly blackened. This usually takes about 15-20 minutes. Once done, take them out of the oven and let them cool.

Step Two

While the peppers are cooling, heat up the remaining two tablespoons of olive oil in a medium pan over medium heat. Add in the minced garlic and stir until it’s fragrant. This usually takes about 1 minute. Then, add in the diced tomatoes, chopped red onion, and a pinch of salt and pepper. Sauté this for about 5 minutes or until the tomatoes start to break down and the onions soften.

Step Three

Once the mixture in the pan is done, remove it from the heat. Add in the fresh lemon juice and apple cider vinegar. Mix it all together then set it aside to cool.

Step Four

Now, take your cooled peppers and remove their stems and seeds. You can do this by making a small incision at the top of the pepper and using a spoon to scoop out the insides. Once done, put the peppers in a blender or food processor along with the tomato and onion mixture from step three. Blitz until it forms a smooth paste.

Step Five

In a mixing bowl, combine the cream cheese, Greek yogurt, and feta cheese. Mix until smooth and creamy. Then, add in your pepper paste and stir until well combined.

Step Six

Finally, fold in the chopped cilantro. Taste and adjust the seasonings as needed. You now have a delicious Roasted Hungarian Wax Peppers Dip. Enjoy it with fresh veggies, chips, or as a spread on sandwiches.
