Its unique flavor profile, a blend of tartness and slight sweetness, lends itself wonderfully to roasting. A Culinary Celebration of My Afro-Southern Roots

This recipe subtly echoes my Afro-Southern roots. The garlic reminds me of the countless gatherings back in Atlanta while the olive oil, a nod to the West African side of my family, adds a familiar warmth. It’s a celebration of this fusion, much like myself, a homely blend of Southern U.S. and Nigerian lineage.

The Health Nugget To Note

The olive oil in this recipe doesn’t just provide a smooth texture and rich flavor. It’s a treasure trove of health benefits. Packed with monounsaturated fats and loaded with antioxidants, olive oil is attributed to heart health and is also believed to help fight inflammation. Moreover, the garlic, while making the dish popping with flavor, bestows a bevy of health benefits ranging from boosting immune system to lowering blood pressure. This dish, hence, does as much good on your palate as for your health.

Comparably, the flavors of Roasted Kapas-kapas with garlic and olive oil are reminiscent of roasted artichokes – an equally delightful veggie-based treat. Served alongside a steaming bowl of Stuffed Pork Chops or Grilled fish with Creole sauce which have rich and heavy flavors, it brings a light, tangy balance to your meal.

In my kitchen in Atlanta, the swaying aroma of Roasted Kapas-kapas with garlic and olive oil often fills the air. It’s where the flavours from my Southern and Nigerian roots blend with the exciting discovery of Kapas-kapas into a culinary adventure. I hope it finds a special place in your kitchen and your heart, just as it has in mine.

ALLERGENS: Garlic

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). While the oven is heating, you can proceed to the next step.

Thoroughly wash the Kapas-kapas. Slice the fruits in half lengthwise and deseed them. This can be done using a spoon to scoop out the sections containing seeds. Make sure to keep the flesh intact.

Step Three

Lay the Kapas-kapas halves on a large baking sheet. Drizzle the halves with olive oil, ensuring each piece gets an equal amount.

Step Four

Peel the garlic cloves and finely chop them. Sprinkle the chopped garlic evenly over the Kapas-kapas halves. Add salt and pepper to taste.

Step Five

Place the baking sheet in the preheated oven. Roast the Kapas-kapas for about 20-30 minutes or until the Kapas-kapas are soft and easily poked with a fork.

Step Six

When the Kapas-kapas are ready, remove the baking sheet from the oven. Allow them to cool before serving. These can be served as a side dish or as a main course, depending on your preferences.
