Roasted Kohlrabi

Depth Of Flavors

I absolutely love how the humble kohlrabi transforms into a royal feast with the perfect blend of olive oil, sea salt, and black pepper. When these elements dance on the roasting pan under a moderate heat, they create a flavor profile that is simply delectable. Adding unsalted butter, chopped fresh thyme, lemon zest and juice elevates the dish to another level. With a drizzling of pure maple syrup, Roasted Kohlrabi becomes a perfect balance of all flavors—salty, sweet, sour, bitter and umami.

Healthful and Delicious

The star ingredient of this dish, kohlrabi, is a powerhouse of nutrients. It’s rich in dietary fiber, antioxidants, and vitamin C. What’s more, its preparation method—roasting—helps lock-in its inherent nutrients while adding the flavorful charm of caramelization. Paired with olive oil (filled with heart-healthy fats) and a squeeze of lemon juice (boasting vitamin C and digestion-promoting qualities), this dish is indeed a boon for health enthusiasts.

What You’ll Need

  • 3 medium kohlrabi
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of unsalted butter
  • 2 teaspoons of chopped fresh thyme
  • 1 teaspoon of lemon zest
  • 1 tablespoon of fresh lemon juice
  • You also need pure maple syrup to taste
ALLERGENS: olive oil, unsalted butter

Method

Step One

Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius).

Step Two

Peel the kohlrabi and cut it into 1-inch cubes. Transfer the cubes to a large bowl.

Step Three

Add the olive oil, sea salt, and pepper to the bowl. Toss the kohlrabi cubes until they are well-coated.

Step Four

Arrange the kohlrabi cubes on a baking sheet in a single layer, ensuring that they don’t touch each other to allow even roasting.

Step Five

Roast the kohlrabi in the preheated oven for 15 to 20 minutes. It’s done when it’s tender and the edges are browned and crispy.

Step Six

While the kohlrabi is roasting, melt the butter in a small saucepan. Add the thyme and lemon zest. Cook over medium heat until the butter has melted and the thyme and zest are fragrant, about 2 to 3 minutes.

Step Seven

Take the kohlrabi out of the oven and transfer to a serving dish. Pour the thyme butter over the top and toss to coat. Drizzle with fresh lemon juice and desired amount of maple syrup. Toss again to mix well and serve while hot.
