Nothing sparks joy in my heart more than discovering a new recipe and sharing my gastronomical journey with you all. Today, I bring to you a delightful recipe that fuses classic French techniques with a bit of Creole flair — the perfect example of the fusion cuisine I’ve gown up with and adore. I present you with Roasted Lamb with Clary Sage Rub.

Roasted Lamb with Clary Sage Rub

The Beauty of Clary Sage

I have a soft spot for sage, especially when pairing it with lamb. Its slightly peppery flavor with hints of mint boosts any dish, giving it a unique and sophisticated flair. Most remarkable of all, however, is clary sage—a variant of sage known for its therapeutic properties and calming aroma. The secret is to use it sparingly, allowing its undertones to subtly enhance the dish without overpowering the other flavors.

A Versatile Entrée

Roasted Lamb with Clary Sage Rub bears a striking resemblance to the famous Provençal Leg of Lamb given the mix of herbs and garlic. This delicious rack of lamb can be the center of a lavish dinner or a low-key family gathering. I love pairing the lamb with classic sides like Gratin Dauphinois or roasted Brussels sprouts for a well-rounded meal.

Lastly, what marks this recipe as one of my favorites are its potential health benefits. Lamb is a fantastic source of iron, vitamin B12, and zinc. Packed with beneficial herbs like sage and rosemary, this recipe is not just flavoursome, but also nutritious.

Of course, the key to a successful dish lies in the balance of flavors. Remember to taste as you go and adjust the seasonings as per your liking. Now, get yourself into the kitchen and recreate this masterpiece. I assure you, the Roasted Lamb with Clary Sage Rub will quickly become a go-to in your household, just like it has in mine. Bon appétit!

What You’ll Need

  • 2 racks of lamb
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh clary sage, finely chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1 tablespoon of lemon zest
  • 1 teaspoon of Dijon mustard
  • 2 tablespoons of fresh rosemary, finely chopped
ALLERGENS: Lamb, garlic, mustard

Method

Step One

To start off, preheat your oven to 400 degrees Fahrenheit to properly roast the lamb.

Step Two

While waiting for the oven to heat, combine the finely chopped fresh clary sage, minced garlic, sea salt, freshly ground black pepper, lemon zest, Dijon mustard, and the finely chopped fresh rosemary in a small bowl. These ingredients will make up the rub for the lamb.

Step Three

Next, rub your racks of lamb with the olive oil. This will help the rub stick better and will add flavor to the lamb.

Step Four

Spread the previously made rub evenly over the racks of lamb. Make sure to cover all sides to infuse it with as much flavor as possible.

Step Five

Once your oven has reached the correct temperature, place the lamb in a roasting pan and bake for about 20-25 minutes, or until the lamb is cooked to your desired level of doneness.

Step Six

Finally, let your roasted lamb rest for a few minutes after removing it from the oven before carving and serving. This will allow the juices to redistribute throughout the meat, making it more flavorful and tender.

Step Seven

Enjoy your flavorful and tender Roasted Lamb with Clary Sage Rub!
