As someone who has grown up with food as an expression of heritage and storytelling, there is a particular recipe that speaks volumes to me. The Roasted Mayan Sweet Onion and Garlic Pasta exudes a captivating allure with its melange of robust flavors and aromas. Let me tell you why this recipe resonates so deeply with me and might just find its way into your heart as well.

A nod to my love for Earth’s bounty

One of the ways my dual heritage manifests in my culinary creations is through my profound respect for nature’s gifts. This pasta dish remarkably embodies that, with the use of vibrant vegetables as its very soul. The Mayan sweet onions and garlic are cooked into a sublime caramelization, their natural sugars drawn out by the heat, complimented by the natural acidity of cherry tomatoes and the sharp zing of black olives. It’s undeniably a vegetable lover’s dream.

A symphony of international flavors

Although my roots are firmly planted in Seattle and Japan, I love exploring the diverse culinary landscape of the world. This pasta dish, with its Mediterranean ambition, echoes a plate of aglio e olio or a classic spaghetti puttanesca with a unique twist. Pair it with a side of grilled radishes for a complete meal that will surely delight your tastebuds.

Healthful indulgence

Nourishing the body should never compromise tantalizing the palate. This concrete philosophy can be noticed in this pasta’s health benefits. Packed with vital nutrients from sweet onions, garlic, cherry tomatoes, and olives, this dish provides dietary fiber, boosts immunity and supports heart health. Finishing it off with a sprinkle of fresh basil not only elevates the herbal dimension but also adds an antioxidant punch.

To wrap this up, the Roasted Mayan Sweet Onion and Garlic Pasta is more than just a hearty dish—it’s a comforting story told on a plate, a trusty ally on your wellness journey, and an exciting journey into the world of flavors. Now that’s a recipe worth loving, isn’t it?

What You’ll Need

  • 1 lbs of linguine pasta
  • 3 Mayan sweet onions, thinly sliced
  • 10 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 1/2 cup of white wine
  • 1.5 cups of cherry tomatoes, halved
  • 1 cup of black olives, pitted and sliced
  • 2 tablespoons of chopped fresh basil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 lemon, squeezed
  • Grated Parmesan cheese for garnishing
ALLERGENS: gluten (pasta), sulfites (wine), olives, garlic, basil, lemon, dairy (Parmesan cheese)

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C). On a large baking sheet, spread the sliced Mayan sweet onions and minced garlic, then drizzle them with olive oil. Give it a good stir to ensure all are coated with the oil.

Step Two

Place the baking sheet in the oven and roast the onions and garlic for about 25-30 minutes, or until they turn golden brown and aromatic. Do remember to toss them halfway through the roasting process.

Step Three

While the onions and garlic are roasting, bring a large pot of salted water to a boil. Add the linguine pasta and cook until al dente according to the package instructions. Once done, drain the pasta and set it aside, reserving 1 cup of the pasta water.

Step Four

In a large sauté pan over medium heat, combine the white wine and half of the roasted onions and garlic. Let this simmer until the wine reduces by half. Add the cherry tomatoes, black olives, salt, black pepper, and half of the chopped basil, stir, and cook for another 5-7 minutes. Then, add the cooked pasta to the sauté pan.

Step Five

Mix everything together thoroughly, ensuring the pasta is well coated with the wine reduction sauce. Should the pasta seem dry, add a little bit of the reserved pasta water. Squeeze the lemon over the pasta, add the remaining roasted onions, garlic, and fresh basil, and give it one last good mix.

Step Six

Once everything is well combined, remove the pan from heat. Transfer the pasta to individual serving plates, sprinkle with grated Parmesan cheese, and serve immediately while hot.
