What You’ll Need

  • 1 boneless pork loin roast (~2 1/2 pounds)
  • 2 teaspoons salt
  • 1 teaspoon black pepper (freshly ground)
  • 3 tablespoons olive oil
  • 2 tablespoons juniper berries (crushed)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary leaves (chopped)
  • 1 tablespoon fresh thyme leaves
  • 1 cup white wine
  • 2 apples (cored and cut into wedges)
  • 1 cup chicken stock

Method

Step One

First, preheat your oven to 375 degrees Fahrenheit.

Step Two

Prepare the pork loin by patting it dry and then seasoning all over with salt and freshly ground black pepper.

Step Three

Heat the olive oil in a large oven-proof frying pan or dutch oven over medium-high heat. Once the oil is hot, add the pork loin, searing it on all sides until it’s evenly browned. This should take about 5 minutes on each side.

Step Four

While the pork is browning, combine the crushed juniper berries, minced garlic, chopped rosemary, and thyme leaves in a small bowl.

Step Five

Once the pork is seared, remove it from heat. Rub the juniper berry mixture all over the pork loin, ensuring that it’s well coated.

Step Six

Next, arrange the apple wedges around the pork in the pan. Pour the white wine and chicken stock over the pork and apples. Transfer the pan to the preheated oven.

Step Seven

Roast the pork in the oven for about 60 minutes, or until a meat thermometer inserted into the thickest part of the loin reads 145 degrees Fahrenheit.

Step Eight

Remove the pan from the oven and transfer the pork to a cutting board. Let it rest for 10-15 minutes before carving.
