Roasted Pork Loin with Myrtle Cinnamon and Apple Sauce

Isn’t it simply mouthwatering? Now, let’s talk about why it’s also much more than just a pleasing sight.

An Ode to My Ancestral Roots

The beauty of this dish is how it’s reminiscent of the flavorful Gujarati Pork Vindaloo, a popular Indian dish. However, instead of the traditional vindaloo sauce, I’ve opted for an American classic – apple sauce. Paired with Myrtle Cinnamon, a rare and beautifully fragrant spice found in the heart of India, we’re faced with an unforgettable fusion experience. This recipe makes me feel proud of my roots as it brings a hint of India into an otherwise traditional Western dish.

The Health Benefits of Apple and Cinnamon

Aside from the blend of flavors, this recipe also carries significant health benefits, especially from the apples and cinnamon. Apples, being one of the most wholesome fruits, are loaded with dietary fiber which aids digestion. Meanwhile, cinnamon boasts anti-inflammatory properties and is believed to help in managing diabetes. Cinnamon has been linked to a reduced risk of heart disease, while apples are known for their numerous benefits for bone health, weight management, and heart health.

The Roasted Pork Loin with Myrtle Cinnamon and Apple Sauce is not only a delicious tribute to my Indian-American heritage but also a health-conscious choice. This masterful combination of wholesome and tasty is why I cherish this recipe.

The Perfect Pairing

“But what should I serve it with?”, you may ask. Well, the beauty of this Roast Pork Loin is the universal appeal it carries. It pairs excellently with a robust Shiraz or a zesty Zinfandel. As for sides, a simple green salad or earthy roasted cauliflower would complement this dish wonderfully. It’s also a match made in heaven with a classic apple slaw or a hearty mashed potato.

Whenever I introduce this recipe to someone new – be it through my writing or at a family dinner, it feels like sharing a piece of my personal story. It’s my hope and belief that this Roasted Pork Loin with Myrtle Cinnamon and Apple Sauce will soon become a part of yours too.

What You’ll Need

  • 2 pounds of pork loin roast
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground Myrtle Cinnamon
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 cloves of garlic, minced
  • 1/4 cup of white wine
  • 1/4 cup of chicken stock
  • 6 apples, peeled, cored and chopped
  • 1 cup of water
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of vanilla extract
ALLERGENS: Pork

Method

Step One

Preheat your oven to 375 degrees F (190 degrees C). While the oven is heating up, get your pork loin ready. Trim any excess fat if needed, then rub it all over with olive oil.

Step Two

In a small bowl, combine the ground myrtle cinnamon, salt, pepper, and minced garlic. Mix these ingredients well, then rub the mixture all over the pork. This not only adds flavor but also gives the roast a nice, crusty exterior.

Step Three

Heat a large oven-safe skillet or roasting pan over medium-high heat. Add the pork loin to the pan and brown it on all sides. This should take about 5 minutes.

Step Four

After the pork is browned, pour in the white wine and chicken stock, then place the pan in the preheated oven. Roast the pork for approximately 60-75 minutes, or until the internal temperature reaches 145 degrees F (63 degrees C).

Step Five

While the pork is roasting, you can prepare the apple sauce. In a large pot, combine the chopped apples, water, and brown sugar. Bring the mixture to a simmer over medium heat, then reduce to low and cover the pot. Let it simmer for about 20 minutes, or until the apples are soft and the sauce has thickened.

Step Six

Once the apples are soft, remove the pot from the heat and stir in the vanilla extract. Use a masher or immersion blender to puree the sauce until it’s your desired consistency.

Step Seven

Once the pork is done roasting, remove it from the oven and tent it with aluminium foil. Let it rest for at least 15 minutes before slicing. This allows the juices to redistribute back into the pork, making it extra juicy.

Step Eight

After the pork has rested, slice it, served it on a platter and drizzle the apple sauce over the top. Enjoy your delicious Roasted Pork Loin with Myrtle Cinnamon and homemade Apple Sauce!
