What You’ll Need

  • 2 lbs boneless pork loin
  • 6 cloves of garlic, minced
  • 2 tablespoons sage, fresh and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter, unsalted
  • Juice and zest of 1 lemon
  • 1 cup dry white wine
  • 1 cup chicken broth
ALLERGENS: Garlic

Method

Step One

Preheat your oven to 400 degrees F (205 degrees C). Meanwhile, in a small bowl, combine the minced garlic, chopped sage, salt, and black pepper together. Rub this mixture evenly all over the pork loin.

Step Two

In an oven-safe large skillet or roasting pan, heat the olive oil and butter over medium-high heat. Once the butter has melted and the oil is hot, add the pork loin and sear each side until it’s browned. This should take about 2 minutes per side.

Step Three

Remove the pan from the heat. Sprinkle the lemon zest over the pork loin, then squeeze the lemon juice over it. Pour the dry white wine and chicken broth into the bottom of the skillet or roasting pan, being careful not to pour it directly on the pork.

Step Four

Transfer the skillet or roasting pan to the preheated oven, ensuring the pork loin is fat-side up. Roast for about 50 minutes, or until a meat thermometer inserted into the thickest part of the pork loin registers 145 degrees F (63 degrees C).

Step Five

Remove the skillet or roasting pan from the oven. Tent it loosely with aluminum foil and let the pork loin rest for about 10 minutes before slicing and serving.

Step Six
