The inspiration behind this dish, like many of my culinary creations, lies in the rustic flavors and hearty sustenance that was always a part of my Colorado upbringing. These potatoes have an earthy charm, reminiscent of the ones we used to dig up in our backyard garden, while the bold kick of tarragon quite wonderfully echoes the wild herbs growing freely in the valleys of Rockies.

Yet, despite its mountain-inspired roots, Roasted Potatoes with Tarragon finds its place at fancy dinner tables as readily as it does at a family reunion around a campfire. Almost uncannily, it reminds me of the oven-roasted potatoes with herbs from Bon Appétit – perfectly roasted, beautifully aromatic, and delightfully simple. This dish goes perfectly well with a hearty meat entrée, say, a succulent flat iron steak from Food Network or a lovingly grilled trout, dripping with fresh lemon juice.

What You’ll Need
- 2 pounds of baby potatoes
- 3 tablespoons of olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh tarragon, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Method
Step One
Preheat your oven to 400 degrees F (200 degrees C). While the oven is preheating, wash the baby potatoes thoroughly.
Step Two
In a large bowl, combine the olive oil, minced garlic, chopped tarragon, sea salt, and black pepper. Stir until you get a uniform mixture.
Step Three
Add the washed baby potatoes to the bowl and toss them till they are evenly coated with the olive oil and herb mixture.
Step Four
Transfer the coated potatoes to a roasting pan or a baking sheet, spreading them out in a single layer. This will ensure that all potatoes roast evenly.
Step Five
Put the pan or sheet in the preheated oven and roast the potatoes for about 25 to 30 minutes, or until they are lightly browned and crisp on the outside and tender on the inside. Flip the potatoes halfway through the cooking time to ensure even browning.
Step Six
Take the roasted potatoes out of the oven and drizzle them with the lemon juice while they are still hot. Toss the potatoes a bit to distribute the lemon juice. Taste and adjust the seasoning if needed.
Step Seven
Serve the roasted potatoes with tarragon hot, as a side dish to the main course.
