What You’ll Need
- 3 large carrots
- 2 sweet potatoes
- 1 butternut squash
- 4 beets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Voatsiperifery pepper
- 2 tablespoons chopped fresh rosemary
Method
Step One
Preheat your oven to 400 degrees F (200 degrees C).
Step Two
Peel and chop the carrots, sweet potatoes, butternut squash and beets into bite-size pieces. Try to keep the pieces roughly the same size so they all cook at the same rate.
Step Three
Place all the chopped vegetables in a large mixing bowl. Add the olive oil, salt, black pepper, Voatsiperifery pepper and fresh rosemary to the bowl.
Step Four
Toss the ingredients together until all the vegetables are well-coated in the oil and seasonings.
Step Five
Spread the vegetables out in a single layer on a large baking sheet. Try not to crowd the vegetables, as this can cause them to steam rather than roast.

Roast the vegetables in the preheated oven for about 45 to 50 minutes, or until they are tender and golden brown. Stir or flip the vegetables every 15 minutes or so to ensure they roast evenly.
