What You’ll Need
- 2 pounds of snap peas
- 4 chicken breasts
- 4 cloves of garlic
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of honey
- 2 tablespoons of freshly squeezed lemon juice
- Zest of 1 lemon
- 1/2 cup of chopped fresh mint leaves
- 1/2 cup of chopped fresh basil leaves
Method
Step One
Preheat your oven to 425 degrees Fahrenheit. While the oven is preheating, wash the snap peas and pat them dry. Remove the ends and any strings from the sides of the peas.
Step Two
On a large baking sheet, evenly distribute the snap peas. Add the chicken breasts to the baking sheet, having them surrounded by the peas.
Step Three
Peel and mince the 4 cloves of garlic. In a small bowl, mix the minced garlic, 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 tablespoon of honey, 2 tablespoons of freshly squeezed lemon juice, and the zest of 1 lemon. Stir until well incorporated.
Step Four
Drizzle the garlic-lemon-olive oil mixture over the chicken breasts and snap peas, making sure to evenly coat everything. Toss lightly to make sure everything is well covered.
Step Five
Place the baking sheet in the preheated oven and roast for around 20-25 minutes, or until the chicken is cooked through and the peas are tender and slightly browned.
Step Six
In the meantime, chop the fresh mint leaves and basil leaves. Once the chicken and peas are roasted, remove them from the oven and immediately sprinkle with the chopped mint and basil. Serve warm and enjoy!
