What You’ll Need
- 6 tangerines
- 2 large heads of Romaine lettuce
- 1/4 cup of honey
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of sea salt
- 1/2 teaspoon of freshly ground black pepper
- 1/2 cup of roasted almonds, chopped
Method
Step One
Preheat your oven to 400 degrees Fahrenheit. Cut 4 of the tangerines in half and place them on a baking sheet. Roast them in the oven for about 20 minutes or until they become tender and slightly caramelized. Once they are done, let them cool and then squeeze out the juice into a bowl. Keep the juice aside for the dressing.
Step Two
While the tangerines are roasting, wash and chop the Romaine lettuce. Make sure to discard any wilted outer leaves and the base. Place the chopped lettuce in a large salad bowl.
Step Three
Peel the remaining 2 tangerines and separate them into segments. Add these segments to the salad bowl with lettuce.
Step Four
In a small bowl, whisk together the roasted tangerine juice, honey, olive oil, apple cider vinegar, sea salt and freshly ground black pepper. This will be your salad dressing.
Step Five
Drizzle the dressing over the lettuce and tangerine segments in the salad bowl. Toss the salad well to ensure all the ingredients are evenly coated with the dressing.
Step Six
Sprinkle the roasted almonds over the salad just before serving to add a crunchy texture. You can add more or less to taste. Your Roasted Tangerine and Romaine Salad is now ready to serve!
