Plus, it allows me to work with tatsoi, a vegetable I’ve loved since my childhood days in Seattle.

Roasted Tatsoi with Parmesan and Breadcrumbs

Rooted in Tradition, Crafted with Love

Tatsoi is a leafy green commonly used in many Japanese dishes. It’s packed full of vitamins and minerals, and I’ve always admired the resilient nature of this vegetable. With this recipe, the tatsoi becomes a melting pot of flavors – the robust hints of Pacific Northwest garlic and cheese, the tang of freshly squeezed lemon, and the crunch of panko breadcrumbs, a staple in Japanese cuisine. We’re essentially remixing this traditional ingredient with a contemporary twist, much like the infusion of my heritage in my life.

The Symphony Of Flavor

There’s something uniquely satisfying about the sound of breadcrumbs crisping in a hot pan. It’s this symphony of flavors, with each ingredient playing its part, which makes Roasted Tatsoi with Parmesan and Breadcrumbs so special. The process of crafting this dish is almost meditative for me.

This dish aligns well with dishes like Miso Soup or a light, flavorful Gyoza. You could also serve it alongside a hearty Sake-Steamed Salmon. The versatility of this dish lies in its simplicity, lending itself well to an array of pairings.

In essence, whether you’re a fan of Japanese cuisine, or are simply looking for some wholesome, flavorful vegetarian dishes to add to your repertoire, this Roasted Tatsoi with Parmesan and Breadcrumbs recipe might just be the fusion of flavors you’ve been searching for. Happy cooking!

What You’ll Need

  • 2 bunches of tatsoi
  • 3 tablespoons of olive oil
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1 cup of panko breadcrumbs
  • 1/2 cup of freshly grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 lemon, zested and juiced
ALLERGENS: Gluten, Dairy

Method

Step One

Preheat your oven to 400 degrees Fahrenheit.

Step Two

Wash your tatsoi bunches thoroughly and pat them dry with a kitchen towel to remove as much water as possible.

Step Three

Set your tatsoi on a baking sheet and drizzle it with the olive oil. Then, sprinkle them with the sea salt and black pepper. Toss to make sure the leaves are well-coated and spread them out in an even layer on the baking sheet.

Step Four

In a bowl, combine the panko breadcrumbs, freshly grated Parmesan cheese, minced garlic, and the lemon zest.

Step Five

Sprinkle the breadcrumb mixture over the tatsoi, making sure they are evenly covered.

Step Six

Bake the tatsoi in the oven for about 10 minutes, or until the breadcrumbs are golden brown and the tatsoi is wilted and crisp. Be sure to monitor the tatsoi while it cooks since it can burn easily.

Step Seven

Remove the tatsoi from the oven and drizzle the lemon juice over it. Serve it hot as a side dish.
