What You’ll Need
- 3 cups Cherry tomatoes
- 2 large Eggplants
- 2 large Zucchinis
- 2 medium Bell peppers
- 1 large Red onion
- 6 cloves Garlic
- 3 tablespoons Olive oil
- 2 teaspoons Salt
- 1 teaspoon Black pepper
- 1 tablespoon Fresh pennyroyal leaves, finely chopped
Method
Step One
Preheat your oven to 400 degrees Fahrenheit (205 degrees Celsius).
