What You’ll Need

<li>2 tablespoons vegetable oil</li>

<li>1 onion, chopped</li>
<li>1 tablespoon curry powder</li>
<li>1 teaspoon ground turmeric</li>
<li>1 teaspoon ground cumin</li>
<li>1 teaspoon ground coriander</li>
<li>1/2 teaspoon red pepper flakes</li>
<li>2 cups vegetable broth</li>
<li>1 can (13.5 ounces) coconut milk</li>
<li>4 cups assorted chopped vegetables (such as potatoes, carrots, beans, bell peppers)</li>
<li>1 teaspoon sugar</li>
<li>Salt to taste</li>

Method

<h3>Step One:</h3>
To start with the Roti Canai, in a large bowl, mix together the flour, salt, and sugar. Create a well in the middle and pour in the beaten egg, water, and melted butter.
<h3>Step Two:</h3>
Mix the ingredients until it forms a sticky dough. Knead the dough on a floured surface until it becomes smooth and elastic. This process may take around 10 minutes.
<h3>Step Three:</h3>
Divide the dough into small balls and brush each with the vegetable oil. Cover them and let them rest for at least 4 hours.
<h3>Step Four:</h3>
After the dough has rested, take each ball and flatten it by hand. Stretch it out as thin as possible, then fold it over itself a few times to create layers. Repeat this process with the rest of the balls.
<h3>Step Five:</h3>
Heat a pan over medium heat. Fry each roti until golden brown, flipping it once to cook evenly on both sides. Keep the cooked roti warm while you prepare the vegetable curry.
<h3>Step Six:</h3>
For the vegetable curry, heat the vegetable oil in a large saucepan. Add the minced garlic and chopped onion, cooking until they become fragrant and golden.
<h3>Step Seven:</h3>
Next, add the curry powder, turmeric, cumin, coriander, and red pepper flakes to the saucepan. Mix well and cook for a few minutes to let the spices release their flavor.
<h3>Step Eight:</h3>
Add the vegetable broth, coconut milk, and the chopped vegetables to the saucepan. Stir well to combine all the ingredients. Cover the saucepan and bring the mixture to a boil.

Once boiling, reduce the heat and let the curry simmer until the vegetables are tender. This might take around 20 minutes. Then, add the sugar and salt to taste.
