There’s a certain magic in the simplicity of comfort food that brings us closer to home no matter where we are in the world. One such dish that nudges comfort food memories in me is the Sago and Corn Soup. As a native New Yorker, I grew up on a varied platter of diverse delicacies, and while this recipe isn’t directly rooted in NYC cuisine, its combination of ease, depth, and adaptable flavors reminds me of the versatile culinary landscape of my city.

A Bowl Full of Goodness

The Sago and Corn Soup Recipe isn’t just comforting to the palate, it also comes loaded with nutritional value. Corn, the star ingredient, is a good source of fiber promoting digestive health. It’s also packed with essential vitamins like A, B and E. The milk in the recipe adds a healthy dose of calcium, while the sago pearls contribute additional fiber, giving this seemingly simple soup a robust nutritional profile.

Simplicity in Flavors, Complexity in Depth

The beauty of this soup lies in the interplay of the deceptively simple ingredients that together create a rich tapestry of flavours. The slight sweetness of the corn beautifully offsets the starchiness of the sago pearls. The overall creaminess of the soup, with a hint of sweetness from the sugar, makes it a delightfully refreshing dish that isn’t overly heavy on the palate.

In terms of similar dishes, this soup reminds me of a simpler version of the classic corn chowder, minus the overt use of ingredients like onions, potatoes, and heavy cream. And if you’re thinking about dishes it could pair well with, I’d suggest going for something savory to complement the slightly sweet profile of this soup. Perhaps something like a hearty grilled cheese sandwich or a serving of crispy garlic bread would make for a perfect pairing.

To wrap up, the Sago and Corn Soup Recipe is much more than a dish; it’s an experience, a comforting hug in a bowl. It’s a testament to the fact that sometimes, it’s the simplest recipes that end up becoming our most treasured culinary mementos.

What You’ll Need

  • 1/2 cup sago pearls
  • 2 cups canned sweet corn kernels
  • 4 cups water
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 4 tablespoons cornstarch (dissolved in 1/4 cup water)
  • Freshly cut fruits for garnish (optional)
ALLERGENS: corn, milk

Method

Step One

Begin by soaking the sago pearls in water for about 30 minutes. While they are soaking, drain the canned corn kernels well to prepare them for the soup.

Step Two

Next, bring 4 cups of water to a boil in a large pot. Once the water is at a rolling boil, introduce the soaked and drained sago pearls. Let them cook until they become translucent. This process should take about 10-15 minutes.

Step Three

Once the sago pearls are properly cooked, add the drained sweet corn kernels into the pot. Stir well to distribute the ingredients evenly.

Step Four

Pour in one cup of whole milk to the pot. Stir again and allow the soup to come to a slow boil. This will help to blend all the flavours together.

Step Five

While the soup is simmering, measure out half a cup of sugar and a quarter teaspoon of salt and add these in. Let the soup continue to boil for another 5 to 10 minutes, or until the sugar and salt are fully dissolved.

Step Six

Finally, prepare a slurry by dissolving 4 tablespoons of cornstarch in a quarter cup of water. Pour this mixture into the soup, stirring continuously to prevent lumps from forming. Let the soup simmer for a final 5 minutes, or until it thickens to your desired consistency. Remember, it will continue to thicken as it cools.

Step Seven

Once the soup is done, remove from heat and let it cool slightly before serving. If you wish, garnish each bowl with freshly cut fruits. Enjoy this sweet, creamy, and comforting Sago and Corn Soup hot or chilled as desired!
