What You’ll Need

  • 1 cup small sago pearls
  • 4 cups water
  • A pinch of salt
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup sugar
  • 1 cup diced fruit (like mango, peaches or berries)
  • 6 fresh mint leaves for garnishing (optional)
  • 1/2 cup fruit puree or jam (like raspberry or peach) for serving (optional)

Method

Step One

Start by soaking the sago pearls in 2 cups of the water for about 30 minutes. After soaking, drain the sago pearls and set aside.

Step Two

Bring the remaining 2 cups of water to a boil in a large saucepan. Add a pinch of salt and slowly pour in the soaked and drained sago pearls while stirring continuously.

Step Three

Reduce the heat to low and let it simmer, stirring frequently to prevent the pearls from sticking to the bottom of the pot. Continue cooking until the sago pearls turn transparent and soft, which may take about 10 to 15 minutes.

Step Four

Add the can of coconut milk and the sugar into the saucepan. Stir well to dissolve the sugar and combine the ingredients. Let the mixture simmer for another 10 to 15 minutes on low heat, or until the mixture thickens to your preferred consistency.

Step Five

While the pudding is cooling, prepare your chosen fruit and mint leaves for garnishing. You can either dice the fruit into small pieces or use them whole, depending on your preference. If you’re using mint leaves, wash them thoroughly and pat them dry.

Step Six

When the sago pudding has cooled, divide it equally amongst serving bowls. Add your diced fruit on top and garnish with the fresh mint leaves. Optionally, you can serve each bowl with a dollop of fruit puree or jam of your choice to sweeten the pudding further.
