    • 1.5 lbs of fresh salmon
    • 2 large eggs
    • 1 cup of breadcrumbs
    • 2 tablespoons of chopped fresh dill
    • 1/2 teaspoon of salt
    • 1/2 teaspoon of ground black pepper
    • 4 tablespoons of olive oil
  • For the Spinach Sauce:
    • 2 cups of fresh spinach
    • 1 cup of heavy cream
    • 2 cloves of garlic, finely chopped
    • 1/2 cup of grated Parmesan cheese
    • Salt and pepper to taste

Method

Step One

Start preparing the salmon pancakes. Take the fresh salmon and chop it finely. In a large bowl, combine the chopped salmon, large eggs, breadcrumbs, chopped fresh dill, salt, and ground black pepper. Mix well until all the ingredients are evenly distributed.

Step Two

Shape the salmon mixture into small pancakes. Ensure they are not too thick for easier cooking. Set aside.

Step Three

Heat the olive oil in a large frying pan over medium-high heat. Once the oil is hot, carefully add the salmon pancakes to the pan. Cook the pancakes for about 3-5 minutes on each side or until they are golden brown. Remove from the pan and set aside.
