What You’ll Need

  • 6 pieces of salmon fillet (6 ounces each)
  • 1 tablespoon of olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 cup of blackcurrants (fresh or frozen)
  • 1/2 cup of red wine
  • 1/2 cup of sugar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of cornstarch
  • 2 tablespoons of cold water

Method

Step One

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). While waiting for the oven to warm up, take your salmon fillets and season them with salt and black pepper to taste.

Step Two

Heat a large oven-safe skillet over medium heat. Add the olive oil when it’s hot. Add the salmon fillets to the skillet, skin side down. Cook the salmon for about 3-4 minutes until the skin becomes crispy.

Step Three

Once the skin is crisp, transfer the skillet to the preheated oven. Bake for about 10-12 minutes until the salmon is cooked through. Then remove from the oven and set aside.
