What You’ll Need

  • 1 lb salsify, peeled and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 medium carrot, peeled and chopped
  • 1 celery stalk, chopped
  • 1 lb Spanish chorizo, crumbled
  • 6 cups of chicken broth
  • 2 bay leaves
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1/4 cup of cream
  • 2 tablespoons of fresh parsley, chopped
ALLERGENS: onion, garlic, chorizo, chicken broth, cream

Method

Step One

In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the chopped onion, celery, carrot, and minced garlic. Sauté the vegetables until they are soft and the onion is translucent. This should take about 10 minutes.

Step Two
