What You’ll Need

  • 2 pounds of white fish fillets
  • Salt to taste
  • Black pepper to taste
  • 6 sprigs of fresh clary sage
  • 1/2 cup of extra virgin olive oil
  • 3 lemons, halved
  • 2 cloves of garlic, minced
  • 1 tablespoon of red pepper flakes (optional)

Method

Step One

Begin by cleaning the fish fillets. Pat them dry, then season both sides with salt and black pepper. Set the seasoned fish aside.

Step Two

In a small bowl, mix together the extra virgin olive oil, minced garlic and red pepper flakes (if using). Stir until well combined.

Step Three

Preheat your grill on a medium-high setting. Once hot, drizzle some of your olive oil mixture over the grill grates to prevent the fish from sticking.

Step Four

Place the fish fillets on the grill, and brush them generously with the olive oil mixture. Place a sprig of clary sage over each fillet.

Step Five

Grill the fish for approximately 4-6 minutes on each side, or until the flesh is opaque and flaky. Be sure to turn the fish gently to prevent it from breaking apart.

Step Six

While the fish is grilling, place the halved lemons on the grill, cut side down. Grill the lemons until they are lightly charred.

Step Seven

Remove the fish and lemons from the grill. Squeeze the grilled lemons over the fish for a tangy finish. Serve the Salt Grilled Fish with Clary Sage hot, and enjoy your meal!
