The mamey sapote, the star of the dish, is a plush, brightly colored fruit native to Mexico and Central America. Its rich, creamy pulp lends a caramel-like sweetness to the pudding that complements the subtle flavors of the other ingredients.

What You’ll Need

  • 2 cups of mamey sapote pulp, sliced
  • 1/2 cup of evaporated milk
  • 1/2 cup of whole milk
  • 1/4 cup of granulated sugar
  • 2 tablespoons of cornstarch
  • 4 large eggs
  • 1 vanilla bean, split and scraped
  • 1 pinch of salt
  • 1/4 cup of unsalted butter
  • Mint leaves for garnishing
ALLERGENS: mamey sapote pulp, evaporated milk, whole milk, eggs, unsalted butter

Method

Step One

Heat up both whole milk and evaporated milk in a saucepan over medium heat. Take care not to let it boil. Once it’s hot, remove from heat.

Step Two

In a blender, add in the mamey sapote pulp, granulated sugar, cornstarch, eggs and a pinch of salt. Split a vanilla bean in half, scrape out the seeds and add them into the blender as well. Blend until everything is well combined and smooth.

Step Three

Transfer the sapote mixture from the blender to the heated milk in the saucepan and stir everything together until it’s well combined. Cook this mixture over low to medium heat until it thickens into a custard-like consistency. This should take around 10 to 15 minutes. Make sure to stir constantly throughout.

Step Four

Add unsalted butter to the mixture and stir until it melts completely and is well combined into the pudding. If desired, you can blend the pudding once more at this stage to ensure a super smooth consistency. This step is optional.

Step Five

Allow the pudding to cool a bit before pouring it into individual serving bowls or ramekins. Cover the bowls with plastic wrap and place them into the fridge to cool for at least 4 hours, or until the pudding is completely set.

Step Six

Before serving, garnish the sapote pudding with a few fresh mint leaves on top. Enjoy your sapote pudding cold, straight from the fridge.
