What You’ll Need

  • 6 whole duck breasts, boneless
  • 1 tablespoon of olive oil
  • 2 tablespoons of butter
  • Salt and black pepper to taste
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of bilberries
  • 1/4 cup of white sugar
  • 1 tablespoon of cornstarch
  • 1/4 cup of red wine
  • 1/2 cup of chicken broth
  • 1 tablespoon of lemon juice
  • 1 tablespoon of fresh thyme, chopped
ALLERGENS: Duck, olive oil, butter, onion, garlic, cornstarch, chicken broth

Method

Step One

Firstly, season your duck breasts on both sides with salt and black pepper.

Step Two

Next, heat a large skillet over medium heat. Add the olive oil and butter, swirling until the butter is melted.

Step Three

Add the duck breasts to the skillet, skin-side down, and cook for about 6-8 minutes or until the skin is golden brown and crispy. Turn the breasts over and continue to cook for an additional 6-8 minutes. Once cooked, remove the duck breasts from the skillet and set them aside, keeping them warm.

Step Four

In the same skillet, saute the chopped onion and minced garlic until they are softened. This should take about 3-4 minutes.
